Isn't it wonderful how forgiving our bodies are when you give them what it wants... fruits, veggies, whole grains, beans & legumes... The body just hummmmmmmmmms with joy!

Yesterday I had soup (4 servings veg), a Subway Veggie Delite (~1 serving) and a big salad (6 servings). dundas, I hope my body forgives me for what I ate in my youth!

2 1/2 cups mixed vegies, 1/2 cup mushroom gravy (does that count?). Will up it when I have time to cook (and eat).

Yesterday: a big salad (6 servings), 2 things made of flatbread with spinach inside (2 servings?). It would be hard for me to meet this challenge without the big salads. It is expensive to get them at a salad bar, so I will get out my mandolin today and cut up my own vegetables.

Yesterday's lunch was a bowl of Barley Mushroom Soup http://www.drmcdougall.com/misc/2005nl/ ... ecipes.htm
with an added zucchini, carrot, and red bell pepper for color.
Also a big tossed salad.

I made the soup for myself but the good smell of it cooking had my dh asking for it too! I just expected him to eat his usual leftover SAD lunch.
Wonders will never cease! :)

Dinner: Tossed salad, Roasted Butternut Squash, Roasted Eggplant, Green Beans, Potato with Black Lentils in Curried Tomato Sauce.

Gosh I love this lifestyle... eat all I want, not having to count calories or points.... arthritis pains are slowly disappearing..... lose weight..... sleep well... no IBS, no headaches or sinus problems....

BarbAU does a happy dance.

Good morning. I’m having Zucchini Oats for breakfast and Spanish Rice for lunch which has onions, bell peppers, carrots, celery, & tomatoes. I’m also having curried cabbage/carrots/onions/green beans for lunch and green peas for dinner. That puts me well above 5 for the day.

You all inspired me to make some vegetable soup yesterday. Mine included beets, carrots, and onions. So yesterday I had a little soup (1 serving) and a big salad (made it myself :)) (6 servings).

I'm not formally doing this challenge, but I have been lurking so you guys can inspire me. Dundas, just wanted to tell you I made that barley soup for lunch today and absolutely loved it, as did my daughter. I did brown the onion beforehand, and add some garlic, and I think I'd add a little red wine to the cooking broth beforehand next time, but it's very similar to a beef bourguignon flavor. Anyway, definitely a keeper.

I get hungry every time I look at this thread. It's a double win for me. I get to learn about some really good sounding food and I get pretty motivated to try some of these things soon!!! I couldn't be more proud of you folks. Keep it up!

Yesterday: Subway Veggie Delite (1 serving), big salad (6 servings), and beet/carrot soup (2 servings). Today I'm going to buy some ingredients for a green vegetable soup. I've been eating so many carrots lately that I don't want to turn orange. :)

I made a huge pot of Vegetable Barley Soup last nite (pg. 231 in the MWLP book) and it is soooooooooo good! And that'll take me through the Christmas days so that I don't even have to think about cooking for me!
I added Mushrooms to the recipe, didn't have a turnip on hand so added a 2nd potato, and instead of escarole or kale I used baby bok choy greens.

Vegetables Rule!!
