Yesterday: green-vegetable soup (2 servings), soup cup with added spinach (.5 serving), and salad (6 servings). Sorry, not very imaginative. :)

Yup... I'm still hanging in there.. everyday I have big salads (with everything in it but the kitchen sick), hot veggie, and then veggies in the main of the day...

Happy New Year! I managed to eat 5+ servings of non-starchy veggies every day for the challenge. Most of it was salads, but I feel like I found a few new ways to add veggies to my diet. Thanks, seestorcoo, for starting this challenge!
