Salsa Recipe - HELP

Postby Charles » Sun Jan 25, 2009 3:04 pm

Help! I am in Va and my MWL book is in Miami. Could someone post the salsa recipe from the book? I tried to make a batch yesterday and I can tell I did not get it right. Thanks.

Fruit Salsa?

Postby SoulWings » Mon Feb 02, 2009 10:25 am

Hi Charles
I occasionally make fruit salsa with pineapple and/or mango which gives a different flavor to potatoes or whatever you top with salsa.
Here it is if you want to try it:
Note: You can halve the recipe if it is too much - keeps for about a week. Never lasts longer than that around my home! I usually chill about an hour before using to marry the flavors.
This makes a bowlful. I put recipe in a glass (Corningware) covered container. Stainless steel or plastic not good to store in.

2 cups diced fruit (pineapple or mango or combination of both)
1/2 cup diced onion
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
2 Tbsp diced jalapeno (I used canned)
1 tsp to 1 Tbsp crushed garlic (depending on how much garlic you like - I like garlic in everything)
1 Tbsp Braggs' apple cider vinegar
1 Tbsp of some of the fruit (pineapple and/or mango) juice OR water
1/2 tsp-1 tsp Kosher salt (your taste)
Fresh ground pepper to taste
1/2 tsp Mexican seasonings (cumin, cinnamon, turmeric, coriander, cardamon, oreganoetc) or bottled pre-mixed
Chopped cilantro (your taste) - some people don't like cilantro
Optional: 1-2 plum tomatoes, chopped
I put the vinegar and juice/water in a glass bowl, add garlic, onions, peppers and seasonings to marinate as I chop the fruit (and tomatoes).
Mix well to incorporate seasonings and fruit. Refrigerate at least an hour before serving.
ENJOY!

Lime

Postby auntemmy » Mon Feb 02, 2009 11:08 am

Hi Charles! I like to squeeze two whole limes into the recipe and for a good kick... a finely diced up jalapeno pepper (seeds removed).

Yummy!
