Could I use hominy as my starch for MWL even though it is not technically considered a whole food?

Hominy is an acceptable starch to use on the McDougall program, including MWLP. They're the whole kernel that has been treated, not crushed or otherwise ground and processed. Letha (a board member who no longer posts) uses hominy in a number of recipes in her blog,
MWL Food.
