High Quality Stainless Steel - what exactly is it?

Jeff,

How can I tell what a high quality stainless steel product is? Is there a good resource on this? I've searched the internet and this forum and I'm not coming up with what I need?

Questions are:
- How can I determine what a high quality stainless steel product is for cooking? baking?
- Some products have an aluminum core - is that an issue? I had been under the impression it was best to avoid aluminum and I know that it can release and become airborne? I'm not sure I purchase a pan with aluminum of some kind in it.
- When should an old stainless steel pan be avoided due to wear?
- Any brand recommendation you might have?

Hoping you might have some answers on this!

Stainless steel comes in several grades with 304 is the most common one used in food and often referred to as "food grade" You may see the numbers 18/10 or 18/8 which are basically the same thing and are all usually grade 304.

I personally have a set of Cuisnart and they have several levels of their pots/pans. I think I have the middle or upper grade. I have also had All-Clad & Calphalon.

Many "review" sites are just click baits to sell the list of products they are "reviewing”. It there are a few review sites I think do a good job. Here are a few.

I try to avoid aluminum.

Look for “food grade” 304 & 18/10 or 18/8

Thank you and YES that does help! I do have a related question - some of the high quality stainless steel pots and pans have a core of aluminum and I realize it is best to avoid this, but aluminum is often within the pot for conductivity - is that an issue?
