From all I've read, safe and healthy range seems to be <75 pmol/L and <150 pmol/L (above level where degeneration is a risk and below level where cancer risk really increases).
Do you know how rapidly a person's blood level will change in response to diet change. For example, if a typical SAD omnivore just jumped in 100% eating the way you and Dr McDougall recommend, about how long would it take for their IGF-1 to stabilize at the new level?

My answer would be the same as if we were monitoring blood cholesterol, LDL, A1c, etc
