Konjac aka Shirataki noodle

Jeff, I'd appreciate your opinion on these noodles. They seem almost nutritionless. Yet I have not seen anyone talk of a downside to eating this noodle. And talk about satiety! The one thing that troubles me is the process by which they make this product (using lime or some such thing).

What is your take?
