Type 2 diabetic needs more calories?

My formerly non-diabetic husband went to doc 4 weeks ago. Had blood sugar reading of 361 and a1c of 11.3. Doc put him on metformin (2 per day). I put him on a plant based diet. In 7 days, his reading went from 361 to 108. Now after 4 weeks, he has lost 27 lbs. (6"1', 228 to 201lbs) He took himself off metformin last week and his morning readings are 105-110.

Problem: he is still losing weight. How do I increase his calories? He is eating nuts, avocado, soy chorizo, tofu, unsweetened almond milk. He is not exercising at all yet. He needs to, but he can't spare the calories -- or can he?

Kudos to you for setting the direction, and to him for being willing to make the lifestyle change. How wonderful he had such a prompt response.
