I use salsa as a salad dressing and flavoring in beans & rice, and soups.
Some salsas contain modified food starch, though not as major ingredient. I understand that is made from plant products. Is salsa containg modified food starch ok to eat in WFPB lifestyle?

What brand? I don’t recall modified food starch as an ingredient back when read labels and bought salsa in jars. You should be able to find other brands without.
It’s been chemically modified. It’s probably used to extend shelf life as thickener, emulsifier, etc. Some food additives (colors, flavors, emulsifiers) do bad things to the gut microbiome. I would minimize it’s use.
If not, making your own salsa is very easy, and fun way to learn about varieties of chilis.

The brand is La Victoria. I know that Sprouts Market brand does not contain modified starch products.

I believe I used Pace brand salsa.
Ingredients: Crushed Tomatoes (Water, Crushed Tomato Concentrate), Water, Jalapeno Peppers, Onions, Distilled Vinegar, Dehydrated Onions, Salt, Dehydrated Garlic, Natural Flavoring.
