Some good resources:
Simple Daily Recipes by Jill McKeever - blog and YouTube channel. She also wrote a number of small books, including the OMG Good Instant Pot Meals that Mary McDougall once held up and praised during a webinar.
https://simpledailyrecipes.com/https://www.youtube.com/channel/UCzreeL ... oqhG9OnqIQFatFree Vegan by Susan Voisin, who appeared at the McDougall's Chef's Advanced Study Weekend and a long time McDougaller. Some of her recipes go back to the old stovetop pressure cooker days and she's still developing new ones today but for the electric pressure cookers.
https://blog.fatfreevegan.com/The Nelson Family from VegSource - Jeff, Sabrina, and twin daughters Nina and Randa
https://vegsource.com/There are some recipes on their website, and each of the Get Healthy Now DVD sets include a cooking demonstration by Sabrina making a pressure cooker soup or chili, but alas, never posted for free on YouTube or anywhere. The daughters wrote the Clear Skin Diet book which includes a load of recipes, including updated versions of their mother's pressure cooker ones for making in the InstantPot, and they may have demonstrated a few on their YouTube channel, too.
