we used to live on the east side of vegas about 30 years ago...I know the apartments around that area...around Flamingo rd.

my brotherinlaw and husband used to have funtime bar stools and dinettes on Flamingo next to Ethan Allen. Actually i lived about 3 blocks from Sam's Town when it was one story....fun in those days!

Glad i am out of there. They are still eating like they used to with the buffets! He can't walk, she is in a wheelchair...but the food is good! lol :D

Hummus, hummus, hummus with cut up fresh vegies. Yum. All kinds of flavors are possible and all you need is a blender. You won't even miss the tahini.

Congrats on how good you are doing. It sounds like you are really on a roll. I'm excited to see your total for the week!

A Great Stew: Chickpeas, corn, onion, celery or celery root, potato, cauliflour, pepper and fresh cilantro. Cover with enough water to cover and simmer...You might want to cook the onions a bit first though. So easy, yet so delicious! I learned this recipe in Costa Rica and have modified because plantain and cassava are a little hard to find up here, but if you can get them it's well worth the effort!

(Cassava is super-potato...LOL, plantain is like banana but can be used like potato!)
