McD’s article on arsenic

Postby Sanderson » Tue Feb 09, 2021 2:28 pm

I've just read Dr. McD's article on arsenic in rice and am wondering if the organic brown sprouted rice I buy out of California might be superior because it is sprouted. Could sprouting mitigate the arsenic?

I am no expert but to be on the safe side, you should cook the sprouted brown rice also in the "pasta" style.
I don't think the rice would have gone through the extensive rinsing process during sprouting.

You may want to look at Sorghum as a substitute at times. Millet is also a good choice as are oat groats.

Thanks to both of you. I've been cooking rice "pasta style" for years and will continue to do so but will probably eat more of other starches going forward.
