How did you do on Easter?

I stuck to McDougall except I had white bread (fat free).

I didn't have any of the 3 kinds of pie, 3 kinds of ice cream, or ham.

This is a success for me, so I am telling the story, even though it is a one day story. I hope you all did well, too.

It was just my daughter and myself on Easter. I wanted to make Mary's pancakes, but I couldn't find everything I needed and the things I did find were VERY expensive, so we kept it simple and had a tasty oatmeal and fruit for breakfast and we made mushroom gravy and mashed potatoes for dinner. We both commented on how it used to be when you were supposed to get all meat, a few veggies and just a touch of potatoes. We liked this a whole lot better, plus the mushroom gravy was really delicious and easy to make. We also made the mock tuna that night for my daughter's lunch the next day and it was really good!

It was a great Easter, simple, nutritious and we even got a hike in.

I love cooking with my daughter...what a treat!

Oh, we also had the tofu pudding over fruit...kiwi, bananas and blueberries.

That was better than any pie I've ever had!

Easter dinner was at a friend's house and everybody brought a dish to pass. I brought vegan sushi as an appetizer and vegan potato salad for dinner. The hostess had prepared plain baked potatoes, but everything else at dinner was either animal-based or smothered in cheese. So I loaded up on the sushi and had potatoes and potato salad for dinner. I felt well-fed, and nobody said a single word about my food choices, which was really refreshing.
