Somebody recently asked me if I would share my Top Ten picks from "1000 Vegan Recipes" to date. I'm only about 20% through the book at this point, having made around 220 of the recipes so far. I found it quite hard to narrow it down to just 10, I can only imagine what my favorites list will look like once I've worked my way completely through all the recipes!! :eek:

But here are my top 22 picks as of right now. These have all been tried and reviewed on my blog.

Hi Becky, are there any recipes you've made already that you're wanting to make again soon because they're especially appropriate for fall weather or seasonal harvest? I'm expecting the cookbook in the mail any day now. Thanks for any thoughts.

Hi GG!
What a good idea, making a list of the dishes in "1000 Vegan Recipes" especially suited to the Fall Harvest. Below are the ones I came up with that to me seem especially good this time of year, and would definitely make again to take advantage of local and fresh autumn fare. Most of them I've already reviewed on the blog, but a couple I haven't had a chance to post yet. Also, some I listed just because they make nice warming hearty selections for the Fall weather, even if they aren't strictly made up of foods from the Autumn Harvest. So, here's the list:

Becky, my book arrived and I made the Seared Portobello Fajitas. Really good. This recipe is fast food that doesn't taste like fastfood.

My version ended up being more like a chalupa (openfaced burrito) because I warmed the tortilla up in oven and it got crispy, so didn't try to fold it to serve.

There are only a few ways I regularly use portobellos, so it's wonderful to find another yummy option.

I didn't have the ingredients for the green guacamole, so just skipped it.

To round out the meal, I served it with some leftover beans (aduki + cannellini) mixed with some sprouted lentils and warmed together in saucepan. Salsa and chopped golden tomatoes spooned over it for serving.

For a side dish, I took part of a baked butternut squash, cut thick halfmoon slices, stood them up with cut side up, curved side down (rather than lay on side) because I wasn't using oil, sprinkle with cinnamon, bake at 400 degrees for 30 minutes. They did not stick to the ceramic baking dish but came out easily. The skin didn't stick like the flesh would, which is why standing them up worked well.

A great start for using this cookbook. Thanks for the inspiration!

Wow, what a feast, GG! Your dinner sounds fabulous! :nod: What a great first dish to try from "1000 Vegan Recipes"; like you said, fast food that doesn't taste like fast food. Thanks for sharing your experience with us!

I'm really enjoying the orange squash that comes into season this time of year. Another way to bake squash so it doesn't stick is to use parchment paper on a baking sheet. I do this all the time with good results. I like the imagery of the butternut half-moon slices! :)
