The African inspired Red bean stew is off the chart good. I make it in the crock pot, and just add the fresh spinach when I shut it off, so the leaves don't overcook, but the heat of the stew cooks them so they are soft and vibrant green. ( I use red beans instead of Kidney, and red potatoes..., and I up the portion size to make a full crock pot, and then freeze a lot of it, to make it easy to just pull one out every week or so, to rotate in with my other meals.
Serves great over rice or barley, even with potatoes in it!
Anyway lots of good recipes in this blog and cookbook!

I agree with you on the African Inspired Red Bean Stew, it really is heavenly, one of the best recipes in the book. I also add the spinach at the end (here as well as other recipes) so it doesn't overcook, and i usually add about twice as much as what is called for.
Good idea to serve it over rice or barley, and freezing leftovers to eat later!
