Quick cortisol question

In this newsletter (https://www.drmcdougall.com/misc/2010nl/jan/poison.htm) it says

Acids from animal foods also raise cortisol (steroid) levels in your body.21

In note 21, it says: 1)Maurer M. Neutralization of Western diet inhibits bone resorption independently of K intake and reduces cortisol secretion in humans

Am I reading something wrong?

PS: I follow the McDougall way of eating. This came up in an outside conversation. A general answer is fine.

Medical definition of "neutralize": "to counteract the activity or effect of: make ineffective"
